Gardening and Roasted Green Tomatoes

Gardening. My mother is the gardner, and oh boy does she grow a garden. Then she cans and freezes, and makes jams, and yummy soups and sauces for the winter. She is passionate about it.  I just play at it. But I do enjoy having organic fresh herbs and veggies to pick and eat through the summer.  

My mom has probably thousands of tomatoes growing and gave some green ones to me yesterday to fry up. Although I LOVE fried green tomatoes, Luis and I are really sticking to healthy eating and somehow fried green tomatoes don’t fit. So I decided to roast them, and they were yum, yum, yummy! What a great, healthy alternative to fried green tomatoes. 

All I did was wash them and slice them up with a purple onion my mom also grew then toss them with olive oil and sea salt. Spread them out evenly on a baking sheet then bake in the oven for around 30 minutes. I do most veggies this way from sweet potatoes, to cauliflower. Tonight, I’ll be roasting organic zucchini from my garden to go with baked salmon.

I try to cook things that are fresh, easy, simple and healthy. I cannot wait until our hens start laying so we can have fresh eggs.

    I have never eaten a green tomato, fried or roasted. My tomatoes succumbed to the multiple heat waves we have been having. I love the way yours look on the ivy plate. xo

    My Mother was like that too. I love green tomatoes. We are having so much rain that our veggie garden is suffering from it. We do have an abundance of hot banana peppers though.

    Anita — I roast everything but never even considered roasting green tomatoes. YUM!! I'll be giving that a try since I have lots — green tomatoes that is 🙂

    Oh Anita, what bountiful blessing, and to have Mom so close……just so fresh, beautiful and looks like a photo from Southern Lady…..I make asparagus like that, deli-sh….Our soil has marl, a horrid sand….but our youngest planted sunflowers, tiny tomatoes, and some other herbs. I remember your post on stew, ….thanks for sharing…it has been dry here with spurts of storms, sounds better in your part…:)

    That looks good and I am tying to eat healthier, too but hubby still wants fried squash so I have fried it a couple of times and made it other ways, too. He does not like fried green tomatoes so I don't even have to try that. We will not plant as much next year unless I want to can and freeze stuff. Didn't get around to it this year, but this was our first year with a garden.

    I'm so glad I'm reading this post, because I have a basket of green tomatoes on my counter right now, and I've been trying to decide what to do with them. We're trying to eat healthier too, so I really like your solution. Yum! Can't wait to see more of your kitchen…I really like what I'm seeing in your sneak peek.

    These do look yummy! Like Barbara, I've never eaten green tomatoes, fried or otherwise. I love tomatoes, though, and I really love roasted vegetables. The olive oil and salt, combined with the roasting technique, just brings out the most wonderful flavor in veggies. And I do think it's much healthier for us. I applaud you and your husband for eating healthy. We're going to be doing more of that ourselves.

    Thanks for your comment, Anita. I was just reading through some of your posts. I have made about 15 jars of fresh fig jam and jalapeno jam in the last two days! My uncle lives in the country and brought me a bucket of figs! I got busy because they were really ripe. I love your recipe….looks good. I've been eating tomatoes and cucumbers fresh from the garden for weeks. When I get too many, I just make salsa! I'll have to try roasting. My onions have come and mostly gone. I need to plan a triple batch next year. My almost 5 year old has discovered the computer, so I don't get to sit and read as much as I used to. Love all the changes you've made with your kitchen and doors. Just beautiful!

    Love fried green maters,got to try this Anita it looks delish,and better for us,we are always trying to lower the cholesterol and hubby is diabetic,I hope you don't mind I'm "pinning" to my pinterest.
