Hello everyone!
I thought I’d share one of my favorite go-to recipes for not only this season, but for any time you need a quick and easy recipe for a potluck, party or just to have on hand for family at home.
I’ve been making these since the 1990s, and they really are super easy and can be topped with anything you like.
Here is what you’ll need:
MINI CHEESECAKES
12 Vanilla wafers
12 paper muffin pan liners
3 (8 oz.) pkg. Cream Cheese (softened)
3/4 cup sugar
1 tsp. Vanilla extract
3 eggs
** your choice of toppings – pie filling, fresh fruit, etc.
Place wafers, flat-side down, on bottom of each cup of paper-lined muffin pan.
Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended.
Add eggs; mix just until blended. Do not overbeat after adding eggs.
Pour cream cheese mixture over wafers, filling each cup.
Bake at 325º for about 25 minutes. Cool before removing from pan. Refrigerate several hours or overnight. Top with fruit just before serving.
