Winter decorating, Snow, and Apple Crisp!

Hello everyone! I know it’s been a while since Christmas, but I’m happy to be back with some winter decor and a simple comfort food recipe.

We’ve had a bitter cold winter here with single digit lows and highs in the teens. Then, of course, February came in like sumer with record highs🤨

We’ve also had some beautiful snow.

Snow really made our hurricane-damaged creek look so much better with all the rocks and dirt covered.

I did finally get the Christmas decor off the porch this week after it warmed up enough to be outside.

Inside, I brought out more of the collection of Native art I have and just kept the cabin kind of feel I’ve had since I got the chesterfield sofa last fall. I’m really looking forward to keeping this look for spring and maybe taking away the velvet curtains and adding flowers and plants.

We really are just thankful for a warm dry house here considering how cold it’s been, and have enjoyed spending quiet evenings at home.

Although we normally have to eat low carb, I do like something special from time to time, and winter is definitely the time for comfort food. I made an apple crisp, and we enjoyed that warm from the oven with vanilla ice cream.

Apple Crisp

Prep Time 20 minutes
Cook Time 41 minutes
Servings 6

Ingredients
  

  • 1 cup rolled oats
  • 1 cup all-purpose Flour
  • 1 cup brown sugar
  • 1/2 c butter (softened)
  • 6 apples, peeled and sliced
  • 1/2 cup sugar
  • 1 tsp cinnamon

Instructions
 

  • Preheat the oven to 375
  • blend oats, flour and brown sugar into softened butter with fork or pastry cutter
  • mix cinnamon and white sugar in a separate bowl
  • peel and slice apples
  • add half the apples to a greased casserole dish
  • sprinkle half the cinnamon/sugar on top
  • add remaining apples and sprinkle with remaining cinnamon/sugar
  • spread crumble mixture over top evenly
  • bake at 375 for around 40 minutes or until bubbly and golden brow on top
